A distinctive sweet wine made by drying the grapes on straw mats before pressing to concentrate the sugars and flavor. It has a rich, aromatic profile with notes of raisins, candied fruits, and walnuts, followed by a delicate fragrance reminiscent of chestnut honey. The taste is velvety and sweetly balanced with the warmth of the alcohol, offering a very long and pleasant aftertaste. It pairs well with “cantucci” (typical local almond and hazel biscuits) or mature cheeses and liver patés. Served best at 10°-15°C.
