Adur Txakolina 2019 is a Getariako Txakolina, known for its moderately aromatic character, low alcohol, and high acidity. It offers a delightfully intense and elegant nose with white fruit, pear, fresh herbs, and citrus notes. The palate is bracingly fresh with poise and tension, a notably saline character, and a long, complex finish. It is sourced from 3 hectares of vines in Getaria, where yields are carefully controlled to extract maximum intensity of aromas from the Hondarribi Zuri grape. Fermentation takes place in French barrels from the first press at a temperature of 12°C. 10% of the wine undergoes malolactic fermentation to slightly reduce acidity and provide more weight and balance on the palate. The Txakoli is then left in contact with the lees for 6 months to add volume and texture. According to Jancis Robinson, it is a bone-dry white wine with tart green apple, lemon, and delicate floral notes, perfect for pairing with seafood and ideal for warm summer days.
