The wine was fermented in sweep arm fermenters between 25°C to 28°C in stainless steel tanks to maximise flavour and colour, preserving primary fruit flavours. Matured using new French oak with a small component in old French oak. With a dash of Sangiovese (3%), it blushes bright ruby red, offering aromas of cherry, red plum, earthy notes, and oak. The palate is fresh with rich red fruits, enhanced by Sangiovese’s intense red fruit aromas and texture, perfect for game food like wild rabbit ragout.
