How: Hand harvested, with careful selection. Barrel and tank fermented and further barrel matured for a rounded complexity.
Why: To achieve the harmonious balance between fruit and delicate oak/vanilla flavours. Imagine the flavour of dried apricots, with a hint of vanilla and typical honey notes.
With: Ideal with seafood and shellfish. Also mildly spiced curries and lovely with saffron.
When: Now and for the next 5-8 years.
