They’re packed with connective tissue and marbling that transforms with heat into an intensely flavourful and juicy texture. The fascia and sinews provide a tender bounce, while rendered fat adds a sweet, buttery aroma. These ribs are ideal for long stews that yield rich broth, or for air-frying and BBQ where the surface crisps beautifully. The leftover beef fat from air-frying can even be reused to stir-fry vegetables, making every part of this cut worth savouring.
